Cooking Time: 45 minutes
- 1 cup rice
- 1 cup moong daal
- 1 medium sized tomato chopped
- 1 medium sized onion chopped
- 2-3 green chillies finely chopped(you can adjust it according to taste)
- 1 tbsp ginger grated
- 1 tsp mustard seeds
- 2 tbsp oil
- 1 tsp turmeric powder
- Salt to taste
- 2 tbsp coriander finely chopped for garnishing
- 3 cups water
Step 1: Take rice and daal in a bowl and rinse it nicely.Then soak it in water for about 15 minutes.Soaking rice and daal speeds up the cooking process.You can also make khichdi without soaking rice and daal,it will just take little more time to cook.
Step 2: Add oil in pressure cooker and when oil is hot enough then add mustard seeds.When seeds starts crackling then add green chilies and ginger.Saute it for about a minute and then add onion and tomatoes.Stir nicely.
Step 3: Now add salt and turmeric powder.Mix nicely.Add rice and daal which we have rinsed and soaked in step 1,add water and mix all the ingredients nicely.Close the lid of pressure cooker and cook for at least 15 min i.e.3-4 whistles at medium heat.
Step 4: Open the lid only when all the gas has escaped from cooker.Now you can add warm water to the khichdi if khihdi is too dense and stir it nicely.Adjust the water according to the density of khichdi of your liking.Add 1 tbsp ghee on top of khichdi and garnish with coriander and serve.Ghee is completely optional,but it taste very nice with ghee.You can also serve this khichdi with sweet tomato chutney.Enjoy !!
