Cooking Time: 1 hour
- 2 medium sized onion roughly chopped
- 1 big tomato roughly chopped
- 1 big tomato for puree
- 2-3 green chillies roughly chopped (you can adjust it according to taste)
- 2 cloves of garlic roughly chopped (if cloves are small then you can take 3-4)
- 1 tbsp oil
- 3 tbsp butter
- 1 tbsp kasuri methi (MDH,Everest any)
- Salt to taste
- 1 tsp red chilli powder (you can adjust it according to taste)
- 1 tsp sugar
- 1 tsp coriander powder
- 1 tsp pepper powder
- 1 tsp garam masala
- 1/2 cup heavy cream/fresh cream (Malayi)
- 1.5 cup paneer cut into cubes (around 250 gms)
- 1 cup or more milk.
- 1 tbsp coriander finely chopped for garnishing
Step 1: In a kadhai/deep pan take 1 tbsp oil and when oil is hot enough then add chopped green chillies,garlic,onion and tomatoes.Saute for about 5-7 minutes till onion has turned translucent.Keep the heat in medium flame.
Step 2: After 5-7 minutes,turn off the heat and let it cool for around 5 minutes,then take the veggie mixture in a blender jar and blend it to a smooth paste.
Step 3: In the same kadhai/pan (no need to wash it) take 3 tbsp butter and add kasuri methi and saute for around a minute till butter has melted and kasuri methi has started leaving its aroma,then add the onion tomato puree which we have pureed in step 2.
Step 4: Add salt and stir the gravy nicely.Then cover the kadhai/pan and let it cook for around 10 minutes.In the meanwhile take another tomato in the blender jar and blend it to a smooth paste.After sometime open the lid of kadhai/pan and stir the gravy nicely.Then cover it and cook till it starts leaving oil.Keep stirring in between so that the gravy does not stick to the bottom of the pan.
Step 5: When the gravy has cooked then add tomato puree in it and mix nicely.Now add sugar,red chilli powder,coriander powder and pepper powder.Stir the gravy nicely.Cover the kadhai/pan and cook till it starts leaving oil or when it is not sticking to the bottom of kadhai/pan.
Step 6: After gravy has cooked properly add cream and mix nicely.Now add garam masala to the gravy and mix.
Step 7: Now add milk.You can adjust milk according to the consistency of gravy of your liking.Add paneer cubes and let it simmer for around 5 minutes.Keep the gas on low heat.Garnish with finely chopped coriander and serve with Roti, Paratha, Naan, Garlic Naan or any bread of your choice.This curry is super delicious.Give it a try.Enjoy !!
